Why Avocado Toast Will Always Be A Thing!
For years I didn’t like avocado toast. The first time I tasted it, I thought, “Why would someone ruin a perfectly good piece of organic sourdough bread with this flavorless fruit?” But then quarantine happened and I was working from home. I found myself going to the refrigerator, a lot. Looking for something that would give me comfort and fill me up at the same time. A piece of fruit was good for a minute, but not satisfying in the way that fatty carbs feel in your belly.
So, the next time I was at the store, I decided to buy ingredients that I can use to make something that I could keep in the fridge and snack on throughout the day. I saw a bunch of avocados on sale and thought, “Make some guac, buy some chips and salsa and both my fat and salty taste buds would be satisfied.”
When I got home and started to assemble my ingredients, I realized that I didn’t really want guac early in the day because for me it was party and beer food. Okay, so now what do I do with these avocados? I went on Instagram to see what everyone was making and down the avocado toast wormhole I went.
I am completely late to the avocado toast party and I hear it’s been going on for years. When I saw all of the bland combinations, I decided I wasn’t missing anything and those folks weren’t my tribe any way. So, I decided to make my own avocado toast with all of my favorite ingredients.
My take on avocado toast is good y’all, but maybe not completely good for you because I used real butter on delicious brioche bread for the base of the avocado. In my mind, I had the rest of the day to balance thing out and my version of avocado toast kept my satisfied and full of energy until early afternoon.
P.S. Switch out the butter and use gluten free bread for a healthier option 😜
